RECIPE:
1kg Chocolate Muffin mix
150ml water (150g)
8 extra large eggs (450g)
300ml Vegetable Oil (300g)
50g Chocolate chips (optional)
METHOD: Place the Chocolate Muffin Mix, water and eggs into the mixing bowl. Blend together on slow speed for 1 minute. Scrape down. Mix on medium speed for 3 minutes. Add vegetable oil slowly over 1 minute on low speed. Mix for another 3 minutes on medium speed. Fold in the chocolate chips by hand. Fill large muffin tins prepared with muffin cups. Bake at 150ºC until baked through ± 45 minutes (for Jumbo muffins size).
