Pimento is a dried berry from a tropical evergreen tree. Its pleasant aroma resembles a blend of cloves, cinnamon and nutmeg with peppery overtones, and is used to flavour pickles, relishes, sauces, poultry, fish, stuffings and cooked vegetables.
