Pralines have a creamy consistency, similar to fudge. They are usually made by combining sugar (often brown), butter, cream or buttermilk, and nuts (hazelnuts, pecan- ext) in a pot over medium-high heat, and stirring constantly until most of the water has evaporated and it has reached a thick texture with a brown color.
It's a great base to mix with chocolate to create praline fillings with a very pure and intense nut (i.e hazelnut, pecan etc) taste. And of course, they make for a great base to flavour ice creams, patisserie crèmes and dessert crèmes with a pure, unsweetened nut taste.
